Sometimes you just want some rockin guac.  And this hit the spot.  I also had some whole wheat pita’s on hand, so I brushed one with olive oil, sprinkled a little sea salt over it, and stuck it in the oven at 350 until it got crisp.

Black Bean Guacamole

1 Haas avocado
1/2 small lime
1 clove garlic
1/3 cup black beans
Dash of sea salt

Cut avocado in half lengthwise, de-pit, scoop into a bowl and mash.  Roll lime firmly on the counter to get the juices going, cut in half and squeeze juice from one half into the avocado.  Smash, peel, and mince garlic adding to the bowl with the rest of the ingredients.  Mix well, serve and ENJOY!

I’ll sometimes also add corn and/or salsa.  Such a versatile food!  How do you make it?
